Morogo was traditionally made with wild greens picked after the rains. Spinach from the shop does the job beautifully in a city kitchen, and it's on the table in 40 minutes.
Ingredients
Pap
- 1lwater
- 250gwhite maize meal (about 2 cups)
Morogo
- 1 tbspsunflower oil
- 1onion, sliced
- 2tomatoes, chopped
- 1green chilli, finely chopped(optional)
- 500gspinach (or morogo or imifino), washed and roughly chopped
Seasoning
- 1 tspsalt, for the pap and the morogo
- black pepper, to taste
Method
Cook it step by stepStep 1: Boil the water
Bring the water to the boil in a medium pot with half the salt.
Step 2: Start the pap
Pour the maize meal into the middle of the boiling water in a heap. Don't stir yet. Put the lid on and let it cook for 5 minutes.
