Samp and beans is proper Sunday food: it asks for time, not money. Soak it the night before, then let the pot do the work while the house fills with that earthy smell.
Ingredients
Samp and beans
- 500gsamp, soaked overnight
- 250gdried sugar beans, soaked overnight
- 2½lwater, plus more as needed
- 2bay leaves
Vegetables
- 1 tbspsunflower oil
- 1onion, chopped
- 2 clovesgarlic, crushed
- 2carrots, diced
- 1green pepper, diced
- 2ripe tomatoes, grated
- 100gspinach, shredded
Seasoning
- 1 tspsmoked paprika
- 1 tspsalt, or to taste
- black pepper, to taste
Method
Cook it step by stepStep 1: Rinse and start the pot
Drain the soaked samp and beans and rinse them well. Put them in a large, heavy pot with the water and bay leaves and bring to the boil.
