Durban kitchens have always known what to do with a bag of lentils. This mild, everyday pot is packed with veg and ready in 50 minutes, rice and all.
Ingredients
Rice
- 300gbrown rice
Curry
- 1 tbspsunflower oil
- 1cinnamon stick
- 1 tspcumin seeds
- a few curry leaves(optional)
- 1onion, chopped
- 1 tbspginger and garlic paste
- 2 tspmild Durban curry powder or masala
- ½ tspturmeric
- 2tomatoes, grated
- 2carrots, diced
- 250gred lentils, rinsed
- 1lvegetable stock or water
- 100gbaby spinach
- 1 tspsalt, or to taste
To serve
- fresh coriander(optional)
