Nigeria and Ghana will never agree on whose jollof is best. Both sides agree on the method: build a deep red stew base first, then let the rice steam in it undisturbed.
Ingredients
Base
- 3tomatoes, quartered
- 2red peppers, deseeded
- 1onion, halved
- 1red chilli(optional)
Cooking
- 4 tbspsunflower oil
- 1onion, chopped
- 3 tbsptomato paste
- 1 tspcurry powder
- 1 tspdried thyme
- 2bay leaves
- 500glong-grain rice, rinsed
- 500mlchicken or vegetable stock
- 1 tspsalt
To serve
- spring onions, sliced(optional)
Method
Cook it step by stepStep 1: Blend the base
Blend the tomatoes, red peppers, halved onion and chilli to a smooth purée.

Fry the blended pepper base for a good 10 minutes before the rice goes in. That's where the deep colour and flavour come from.
