Hertzoggies appear at weddings, funerals and Sunday visits alike. Jam, coconut and crisp pastry: three simple things that make a very good biscuit tin.
Ingredients
Pastry
- 250gcake flour
- 1 tspbaking powder
- 1 pinchsalt
- 2 tbspsugar
- 125gcold butter, cubed
- 3eggs, separated (yolks for the pastry, whites for the topping)
- 2 tbspcold water
Filling
- 125mlsmooth apricot jam
Topping
- 200gsugar
- 160gdesiccated coconut
Method
Cook it step by stepStep 1: Heat the oven
Heat the oven to 180°C and grease a 24-hole mini muffin tin.
Step 2: Make the pastry
Mix the flour, baking powder, salt and 2 tbsp sugar. Rub in the butter until it looks like fine crumbs. Whisk the egg yolks with the cold water, add them and press the dough together without kneading.
