Fried rice was invented to use up leftovers, and it still works best that way. Cold rice from the fridge fries into separate grains; fresh rice turns to porridge.
Ingredients
Rice
- 600gcold cooked rice (about 250g uncooked)
- 3 tbspsunflower oil
- 3eggs, beaten
- 1onion, finely chopped
- 2 clovesgarlic, crushed
- 1 tbspfresh ginger, grated
- 2carrots, finely diced
- 150gfrozen peas
Seasoning
- 3 tbspsoy sauce
- 1 tspsesame oil
- black pepper
To serve
- 3spring onions, sliced
Method
Cook it step by stepStep 1: Cook the egg first
Heat 1 tbsp oil in a wok or big pan over high heat. Pour in the beaten eggs, let them set for 30 seconds, then break them up and tip them onto a plate.
