French bistro dessert, and still the best use of a slab of dark chocolate. Everything depends on gentle folding, so put on some music and take your time.
Ingredients
Mousse
- 200gdark chocolate, broken up
- 4eggs, separated
- 50gsugar
- 200mlfresh cream
- 1 pinchsalt
To serve
- extra cream, whipped(optional)
Method
Cook it step by stepStep 1: Melt the chocolate
Melt the chocolate in a bowl set over a pot of barely simmering water, then take it off and let it cool for 5 minutes.

Don't let the bowl touch the water, and keep every drop of water out of the chocolate — it will seize into a grainy paste.
