Ripe bananas going black on the counter are the whole point of this one. Blitz them into the batter and nobody will guess the pancakes are mostly oats.
Ingredients
Batter
- 2very ripe bananas
- 2eggs
- 150grolled oats
- 150mlmilk
- 1 tspbaking powder
- 1 tspvanilla essence
- 1 pinchsalt
To fry
- 2 tbspsunflower oil
To serve
- honey or maple syrup
- extra banana, sliced(optional)
Method
Cook it step by stepStep 1: Blitz the batter
Blend the bananas, eggs, oats, milk, baking powder, vanilla and salt until fairly smooth. No blender? Mash the bananas well and stir everything together.
Step 2: Let it stand
Leave the batter for 5 minutes to thicken while you heat the pan.
